Carrot Cake Energy Bites (Nut-Free)

Holisticole - Carrot Cake Energy Bites

Makes around 2 dozen bites
 

WHAT YOU NEED:
1 cup tightly packed, pitted & soaked medjool dates*
1 cup rolled oats
1 cup unsweetened shredded coconut (plus extra for rolling)
3/4 cup lightly packed, finely grated carrot (1-2 small)
3 tbsp hemp hearts
1 tsp true cinnamon
1 tsp pure vanilla extract
1/4 tsp himalayan salt
1-2 tbsp maple syrup (optional)
 

WHAT TO DO:
-First, add your rolled oats to your food processor or blender and pulse a few times to break them down into smaller pieces.
-Add the rest of the ingredients to the food processor and mix until a thick dough is formed
-Line a baking sheet with parchment and begin rolling out your bites (about 1-2 tbsp in size), making around 2 dozen, line them on the parchment sheet
-Optionally roll your bites in extra shredded coconut and then pop them in the fridge to firm up
-Transfer to an air-tight container for storage, keep refrigerated, lasts for up to a week


NOTES
Soak your dates by adding them to a bowl with warm water. Allow them to soak for 5-10 minutes so that they soften up. Don't forget to remove the pits.
