Chewy Matcha Coconut Cookies
Makes 12 cookies
What you need:
2 cups almond flour
2 tbsp coconut flour
1 1/2 tbsp organic matcha powder
1/2 tsp Unflavoured Grass-Fed Gelatin
1/2 tsp himalayan salt
1/2 tsp aluminum-free baking soda
1/4 cup + 2 tbsp unsalted grass-fed butter or coconut oil, melted
1/4 cup raw honey
2 tbsp almond butter
1-2 tbsp pure water
1 tbsp vanilla extract
1/2 cup unsweetened coconut flakes
1/4 cup organic dark chocolate chips
3 tbsp hemp hearts
What to do:
-Preheat oven to 350 degrees F and adjust oven rack to the middle position.
-Whisk almond flour, coconut flour, matcha, gelatin, himalayan salt and baking soda together in a large mixing bowl.
-Stir in the honey, melted butter, almond butter and vanilla.
-Fold in coconut, hemp and chocolate chips.
-Using wet hands, for heaping 2 tbsp sized balls of dough and place on prepared cookie sheet. For 12 cookies in total.
-Gently press down each cookie so that they are 1 inch thick
-Bake for 12-14 minutes, allow cookies to firm up as they cool and store in an airtight container
