Hemp Crusted Chicken Tenders
Makes 4-6 servings
What you need:
1 1/2 pounds boneless, skinless chicken breast, sliced into 1/4-inch thick strips
2 large eggs, whisked
1/2 cup Manitoba Harvest Hemp Heart Toppers - Chipotle Onion & Garlic
1/2 cup almond meal or flour
1/2 teaspoon paprika
1/2 teaspoon himalayan salt
1/4 teaspoon black pepper
Pinch of cayenne pepper
Chosen Foods Avocado Oil Spray
What to do:
-Heat oven to 425 degrees F. Line a baking sheet with parchment paper.
-In a medium-sized bowl, whisk together the hemp heart toppers, almond flour, paprika, Himalayan salt, pepper and cayenne until evenly combined.
-Set up your dipping stations: (1) egg (2) breading; dip each chicken strip in the whisked eggs until completely covered, shake off any excess egg goop, and add to the bowl with the hemp crusting, toss until evenly covered. Transfer to the prepared baking sheet. Repeat until all the chicken is used.
-Spray with a nice dose of avocado oil until they are all lightly covered. Bake for 10 minutes, flip and then cook for another 10 minutes until the chicken is fully cooked (is no longer pink inside) and the hemp breading is golden.
-Serve warm with your desired dipping sauce
-During the dipping station process, the egg and breading will totally stick to your fingers, I find rinsing my hands throughout this process makes it easier.
-My dipping sauce of choice is Chosen Foods Avocado Oil Mayo mixed with a tad bit of organic
