Chilly's Honey Garlic Chicken

Makes 4 servings

What you need:
8 pieces of pasture-raised chicken drumsticks or thighs
3 tablespoons unpasteurized honey
1 tablespoon coconut sugar
1 teaspoon organic black strap molasses, unsulphured
4 garlic cloves, grated with a Microplane or pureed by knife
1 teaspoon onion, grated with a Microplane or or pureed by knife
1 teaspoon himalayan salt
Salt and pepper for seasoning chicken

What to do:
-Preheat oven to 420 degrees F and place the rack in the middle of the oven. Line a rimmed baking sheet with parchment paper. Spread out the chicken on  the prepared sheet, skin side up and season with a pinch of himalayan salt and fresh cracked pepper. Bake in the oven for 20 minutes.
-While the chicken is in the oven combine all other ingredients in a medium sized bowl and mix together thoroughly.
-After 20 minutes, remove chicken from the oven and, using tongs, place each piece in the bowl with the sauce. Be sure to add any fat that is on the baking sheet into the bowl as well with the sauce. Toss to coat thoroughly.
-Return the dressed chicken to the baking sheet, skin side down, and put the chicken back in the oven. Set the sauce bowl aside to save the sauce for the next step. Turn oven to broil and broil (+500°F) for 5 minutes.
-Remove chicken from the oven and turn to skin side up. Using a pastry brush, coat the chicken skin with any remaining sauce. Broil for another 5 minutes.

NOTES:
Remember the flavour is in the fat, aka the chicken skin. I recommend eating these skin on, but it's your choice
