Crispy Rice & Pineapple Bake

Makes 4-5 servings

What you need:
4 cups cooked organic sprouted brown rice (2 cups dry)
1 bunch green onions, sliced
1 cup fresh pineapple chunks
½ cup raw cashews
2 tbsp coconut oil, melted
3 tbsp coconut aminos
1 tbsp jalapeno hot sauce {add more for spicier fried rice}

What to do:
-Preheat oven to 325 degrees F
-Combine green onions, pineapple and cashews in a large bowl
-In a small bowl whisk together the oil, aminos and hot sauce
-Pour oil mixture over the rice mixture and stir until well combined
-Grease a baking sheet with coconut oil and pour an even layer of rice mixture onto the sheet
-Bake for 30-40 minutes or until rice is dry and crispy, stir every 20 minutes

NOTES
Serve with sliced avocado and micgrogreens
