Grass-Fed Beef Stew

Grass-Fed Beef Stew

Makes 8-10 servings

What you need:
1 lb grass fed stewing beef (learn more on grass-fed beef here)
1 medium red onion, medium dice
1 tbsp ghee or coconut oil
3-4 small purple potatoes or red potatoes, cubed
2 cups crimini mushrooms, sliced
4 carrots, sliced
5 stalks celery, sliced
1 small red pepper, medium dice
5 cups filtered water, bone broth or broth
¼-½ tsp cayenne
½ tsp thyme
½ tsp rosemary
¼ tsp himalayan salt
fresh black pepper

What to do:
-Heat oil or ghee over medium heat. Add beef and onion, cook until beef is lightly browned and onion is translucent (5-7 minutes). Stir in cayenne, salt and pepper then remove from heat
-Add all vegetables to a crock pot or dutch oven, then add the beef, onion and remaining spices. Stir to combine then add water or broth.

Crock Pot Instructions:
-Cook on high heat for 1 hour then decrease to low heat for 6-24 hours.

Dutch Oven Instructions:
-Cook on medium heat for 1 ½ hour. (The longer it cooks and sits, the tastier it will be!)
