Heart Beet Oats

Holisticole - Heart Beet Oats

Makes 1 serving
 

WHAT YOU NEED:
1 small cooked beet
3/4 cup unsweetened almond milk or filtered water, more as needed
1/3 cup rolled oats
2 tbsp chia seeds
1-2 tbsp Bulletproof Collagen Powder* (optional)
1 tbsp coconut oil, coconut butter or grass-fed butter
1-2 tbsp raw honey, to taste
Pinch of Himalayan salt
 

TOPPINGS
'Better Yogurt'
Hemp hearts
Fresh berries
 

WHAT TO DO:
-In a high speed blender, combine the cooked beet, milk alternative and collagen until creamy and smooth.
-Pour into a small pot, with all other oatmeal ingredients (except toppings) Cook on medium-low, stirring frequently.
-Stew for 8-10 minutes until soft and creamy, adding more liquid as desired
-Remove from the heat before stirring in the raw honey, pour into your favourite breakfast bowl
-Top with desired toppings & enjoy!
