Hemp Crusted Salmon

Makes 2 fillets

What you need:
Two 4 oz wild sockeye salmon filets
1/4 cup organic dijon mustard
1/8 cup hemp hearts
Himalayan salt
Black pepper

What to do:
-Preheat oven to broil at 500 degrees F and line a baking dish with parchment paper
-In a small bowl, mix the mustard, hemp hearts, salt and pepper.
-Place salmon on prepared baking dish and spread ½ the mustard mixture on each filet.
-Place in oven and broil for 8-12 minutes until the dijon and hemp mixture is browned and crispy
-It should be easy to flake the salmon, be careful not to overcook.

-Cooking times vary from oven to oven, your salmon should have an soft and buttery texture but should not be completely raw in the centre.
