Matcha Green Tea Banana Bread
Makes 4 servings
What you need:
2 very ripe bananas
1/2 cup melted coconut oil or grass-fed butter
2 eggs (or 2 chia/flax eggs - 2 tbsp ground seed + 6 tbsp water)
1 tsp vanilla extract
1 1/4 cup sprouted spelt flour or gluten-free flour blend with xantham gum
3/4 cup almond flour
3 tbsp matcha powder
3/4 cup coconut sugar
What to do:
-Preheat the oven to 350 degrees F.
-Grease a standard bread loaf pan with coconut oil or grass-fed butter
-Add wet ingredients to a food processor and blend to combine (banana, coconut oil, egg, vanilla)
-Slowly add in dry ingredients a little at a time.
-When the dry ingredients are mixed, increase the speed for 1 minute.
-Pour the batter into prepared loaf pan and bake 40-60 minutes until toothpick comes out clean.
