Morning Glory Oats
Makes 1 serving
What you need:
¼ cup rolled oats
1 tbsp sprouted buckwheat groats
1 small carrot, washed and grated
2 medjool dates, pitted and chopped
2 tbsp goji berries
1 tbsp chia seeds
1 tsp "true" Ceylon cinnamon
3/4 cup unsweetened nut/seed milk (or as needed)
What to do:
-Combine the almond milk, oats, buckwheat, dates, grated carrot, goji, chia and cinnamon in a small pot and cook on medium heat until the oats thicken and the carrot begins to soften (about 7-8 minutes). Depending on your pot, if it is prone to things sticking, try adding 1 tsp of coconut oil, the oil will prevent sticking and will also add more flavour.
-Top with suggested toppings, or add your own and enjoy!
