Powerhouse Granola

Powerhouse Granola

Makes 1-2  large mason jars

What you need:
 4 cups rolled oats
¼ cup hemp hearts (I use Manitoba Harvest)
 ¼ cup chia seeds
 ¼ cup raw pumpkin seeds
 ¼ cup raw pecans or almonds
 ¼ cup unsweetened shredded coconut
¼ cup cacao nibs
 ¼ cup unsweetened dried cherries, cranberries or raisins
¼ cup goji berries
½ cup coconut oil
¼ cup  maple syrup
 2 tbsp "true" cinnamon
 

What to do:
 -Preheat oven to 350 degrees F.
 -Portion coconut oil into a small glass bowl and set on top of the oven. As the oven warms up your coconut oil will liquefy
 -Keep your dried fruit and cacao nibs  separate and then add all the rest of your dry ingredients to a medium sized bowl. 
 -Drizzle your sweetener + coconut oil on the mixture. Stir well to combine.
 -Grease a baking pan with a bit of coconut oil then add the mixture to the pan. Bake for approximately 30-40 minutes. Keep an eye on it and try not to burn your mixture mixture, also keep in mind that you want to keep it in the oven for a long enough period to dehydrate it.
 -Once it is baked to your liking and lightly browned, remove from the oven.
 -When it is cooled, mix in the dried fruit and cacao, then add to a glass mason jar, store at room temperature.
 

NOTES:
-This also makes an excellent gift! As you can see, pictured. To make this into  a gift, you would add all of the dry ingredients to  a mason jar and would write out the baking instructions and wet ingredients that are needed.
