Practical Stir-Fry

Practical Stir-Fry

Makes 2-3 serving

What you need:
2 tablespoon coconut oil
1/2 cup of onion or leek, fine dice
1/2 cup mushrooms, thinly sliced
2 cup swiss chard, shredded
1/2 cup carrots, shredded
1/2 cup broccoli florets, minced (chop into vey small pieces)
2 clove garlic, minced or pressed
1/2 lb (226g) pasture-raised chicken breast, turkey or pork, thinly sliced
2 cup baby spinach
2-4 tablespoons coconut aminos
Himalayan salt
Freshly ground black pepper
1/2-1 avocado, thinly sliced (optional)

What to do:
-In a medium pan or skillet, melt 1 tbsp coconut oil over medium heat and lightly sauté onion and mushrooms until lightly browned and fragrant, add in the swiss chard and cook until wilted (2-3 minutes)
-Add in the carrot, broccoli and garlic, cook for another 2-3 minutes, adding salt and pepper to taste
-Add in the thinly sliced poultry and 1-2 tablespoons of coconut aminos
-Once the chicken in cooked through (5-7 minutes), add in the spinach leaves and turn down heat
-Remove from heat once spinach has wilted
-Serve with salt and pepper to taste, and some sliced avocado!
