Spiced King Oyster Mushrooms

Makes 2-4 servings
WHAT YOU NEED:
4-6 fresh king oyster mushrooms (different than 'oyster' mushrooms
Avocado oil (or melted grass-fed butter/coconut oil)
WHAT TO DO:
-Preheat your oven to 375 degrees F and lightly grease a baking sheet with avocado oil, coconut oil or butter.
-Gently rinse your king oyster mushrooms and slice lengthwise into 1/4-1/2 inch thick slices, for larger mushrooms - you can chop close to an inch off the bottom to eliminate a tougher/woodier texure.
-Arrange your sliced king oyster mushrooms on the prepared baking sheet, placing larger pieces towards the outer sides of the baking sheet, and smaller/thinner slices closer to the middle (these will cook faster), leaving just a little bit of space between the mushies.
-Lightly drizzle some oil to coat the mushrooms, then season generously with Himalayan salt, smoked paprika, cumin, cinnamon and cayenne pepper.
-Bake for 15 minutes until the bottom side is golden. Remove from the oven and flip! Lightly drizzle some extra oil (if needed) to coat the other side, and season again with the spice blend.
-Bake for another 10-15 minutes, be careful not to overcook, as the texture can become rather 'leathery'.
-Enjoy as a side to your favourite dish, add to a salad or snack on as is!
-King oyster mushrooms have a meat-like flavour and a firm, resilient texture.
-With similar properties as other bioactive mushrooms (reishi, chaga, lions mane), king oyster mushrooms contain many phytonutrients and antioxidants which benefit immunity and provide preventative traits.
