Spicy Roasted Chickpeas
Makes 4-6 servings
What you need:
1 (28 oz) can Eden Organic Chickpeas, drained and rinsed well
2-3 tbsp coconut oil, melted
1 tbsp nutritional yeast
2 tsp turmeric powder
2 tsp garlic and onion powder
1 tsp paprika powder
1/2 tsp cayenne pepper
1/4 tsp red chili flakes
What to do:
-Preheat oven to 425 degrees F
-Melt coconut oil and rinse chickpeas well; until all bubbles are gone.
-Pour chickpeas onto a baking sheet and gently pat-dry with a clean tea towel
-Drizzle over the melted coconut oil and spices, shake the pan and lightly toss to evenly coat.
-Roast for 40-60 minutes, shaking the tray to turn the chickpeas throughout the roasting process. The longer they stay in, the crispier they will become. Check often to ensure they don't burn!
-Remove once a golden brown colour is achieved and allow to cool and firm up for 15 minutes
-Enjoy as a snack, add to a trail mix or salad!
-Store leftovers in an air-tight container
-Sometimes storing the roasted chickpeas can introduce moisture and eliminate the superb CRUNCH. If this happens, just simply pop them back in the oven at 425 degrees F for 10-15 minutes and they will crisp up again-You're not limited to only spicy chickpeas! You can make them sweet, add other herbs or other spices to suit your liking!
