Sprouted Spelt Pancakes
Makes 12-15 small pancakes
What you need:
2 cups sprouted spelt flour
2 tsp aluminum-free baking powder
1 tsp aluminum-free baking soda
2 organic eggs, beaten
2 cups unsweetened nut/seed milk
2 tbsp coconut oil, melted
1/4 cup sheep yogurt or greek yogurt (optional for super fluffy pancakes)
What to do:
-Mix your flour, baking powder and soda in one large measuring bowl. In a separate small measuring cup beat the eggs (but don’t hurt them), stir in the nut or seed milk and then slowly add the melted coconut oil (don’t make the oil too hot or it will likely cook the eggs)
-Add the liquid to the dry and mix until you have a smooth batter, stir in the yogurt if using. Preheat your frying pan over medium heat and grease with some coconut oil. Scoop or pour in your batter to form a pancake that suits you!
-Cook for 3-4 minutes on each side until golden brown.
-Mix equal parts maple syrup and hemp oil to decrease sugar content and increase healthy fat content
-These are great to FREEZE, keep separated by parchment paper when freezing and then just stick 1-2 in a toaster for a quick breakfast
