Sprouted Spelt Pancakes

Holisticole - Sprouted Spelt Pancakes

Makes 6-8 pancakes


2 cups sprouted spelt flour
2 tsp baking powder
1 tsp baking soda
2 eggs, whisked
2 cups plant-based milk
2 tbsp coconut oil, melted
1/4 cup sheep yogurt or greek yogurt* - optional


-Mix your dry ingredients in a large measuring bowl. In a separate small measuring cup beat the eggs (but don’t hurt them), stir in the plant-based milk and ginger and then slowly add the melted coconut oil or butter
-Add the liquid to the dry and mix until you have a smooth batter, stir in the yogurt if using. Preheat a pan over medium heat and add some coconut oil or butter to prevent sticking. Scoop or pour in your batter to form a pancake that suits you!
-Cook for 3-4 minutes on each side until golden brown
-Top with local maple syrup and toppings of your choice (pictured is creamy peanut butter and chopped walnuts)

-If you mix equal parts maple syrup and hemp oil, this is my favourite tip to decrease sugar content and increase your intake of healthy fat omega-3 fats
-I often like making a large batch that I can freeze. To do this, keep each pancake separated by a square of parchment paper so they don’t stick together, then pop in the toaster as needed for a quick breakfast
