Sprouted Spelt + Superfood Waffles
Makes 2 Belgium waffles
What you need:
2 cups of sprouted spelt flour
2 tbsp mesquite powder
2 tbsp lucuma powder
1 tsp aluminum-free baking soda
½ tsp "true" Ceylon cinnamon
Pinch of himalayan salt
¼ cup coconut oil, melted
2 pasture raised eggs
¾ cup unsweetened nut/seed milk or water
Optional: shaved giddy yoyo raw chocolate
Mix equal parts hemp oil with pure maple syrup to serve
What to do:
-Heat up your Belgium waffle maker
-Add spelt flour, mesquite, lucuma, baking soda, cinnamon and salt to a medium mixing bowl, stir well to combine.
-In another bowl whisk together the two eggs with milk or water and melted coconut oil.
-Add wet mixture to the dry and stir until well combined, pour in half of the batter to the waffle iron and cook until golden brown (2-3 minutes)
-Serve with maple syrup/oil mixture, shaved giddy yoyo chocolate and any other desired superfoods!
-Freeze left over waffles or store in fridge for 3-4 days, re-heat to when serving.
