Sweet Apple Crumble

Makes 6 servings

What you need:
APPLE FILLING
5 apples, thinly sliced (redder the better!)
1-2 tablespoons pure maple syrup
1/2 lemon, juiced
1 tbsp "true" Ceylon cinnamon

CRUMBLE
3/4 cup rolled oats
½ cup almond meal/flour
1/4 cup hemp hearts
¼ cup coconut sugar
2 teaspoons "true" Ceylon cinnamon
¼ cup grass-fed butter or coconut oil, melted
 

What to do:
-Preheat oven to 350 degrees F and grease a 9-inch pie plate with a coconut oil or grass-fed butter
-Combine all filling ingredients in a medium bowl and transfer to pie plate.
-Combine all crumble topping ingredients in a medium bowl.
-Sprinkle crumble  mixture evenly over the top of apples.
-Bake for about 40 minutes and until apples are of desired softness. If after 40 minutes, crumble topping is browning, but apples are not soft enough- place a lid or tin foil over the crumble and bake another 5-10 minutes.
-Allow to cool slightly before spooning out.
-For Dessert: Serve warm and with vegan vanilla ice cream or coconut cream
-For Breakfast:  Pair with some almond butter, fresh berries and some organic sheep/ vegan yogurt
