Vibrant Sweet Potato Toast

Holisticole - Sweet Potato Toast

Makes 2 or more servings

1 large sweet potato, cut lengthwise
Coconut oil or grass-fed butter


Banana & Nut Butter: nut or seed butter of choice, raw honey (optional), sliced bananas, sprinkle of true cinnamon or matcha powder, chia seeds to decorate

Cashew Cheese & Asparagus: cashew cheese spread (I used a Cashew Spinach Dip from the health food store), grilled asparagus, raw pumpkin seeds, crack of black pepper

Egg & Microgreens: microgreen mix, over-easy egg, dash of paprika and himalayan salt

Avocado & Hemp: sliced avocado, dash of himalayan salt and cayenne pepper, sprinkle of hemp hearts


-Slice your sweet potato lengthwise into ¼ inch thick slices
-Place the sweet potato slices into a toaster and toast on high for about 5 minutes or until cooked through
-You may need to repeat this process multiple times depending on your toaster settings (see additional notes below)
-Top with desired toppings and enjoy! Sweet potato toast slices can be stored in an airtight glass container for up to 1 week

-Another option for making the toast is cooking the sliced sweet P in the oven! You can lightly butter each side with coconut oil or grass-fed butter, arrange on a parchment lined baking sheet and allow to 'toast' in the oven at 375°F for 15-20 minutes, flipping halfway through.
