Yum Yum's Breakfast Cookies
Makes 16-20 cookies
What you need:
1 egg or 1 flax egg
1/2 cup sunflower seed butter
1/4 cup coconut sugar
2 tbsp pure maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon aluminum-free baking soda
1/8 teaspoon Himalayan salt
1/3 cup unsweetened finely shredded coconut
1/4 cup cup hemp hearts
2 tbsp cup cacao nibs
3 tbsp white sesame seeds
What to do:
-Preheat oven to 350 degrees F and line 2 baking sheets with eco-friendly parchment paper
-In a large bowl, use a whisk to cream the sunflower butter, coconut sugar, maple syrup, and vanilla (depending on how solid your sunflower butter is, a fork might work best!). Beat in the baking soda and sea salt, and then stir in all other remaining ingredients.
-Roll the dough into heaping tablespoon sized balls and place them on the baking sheets spaced about 3 inches apart. Using the tips of your fingers, gently flatten the dough until it is about 1/2 an inch thick.
-Bake for 12 to 14 minutes, or until the cookies begin turning golden brown at the edges. Leave cookies on the baking sheet to cool.
-When the cookies are cool and are firm, transfer them to a cooling rack & enjoy!
-Store in an airtight container and keep at room temperature.
